You mention flying over mobs...is it possible to get aggro and get ejected from your flying mount and fall and die from falling damage? Flying is just awesome, you can see so much more of everything, and reach a few places you can't otherwise - I found a random mine full of ogres and arakkoa on the edge of the world, no idea what its purpose is but it looks cool, great to find little hidden bits that you wouldn't even have known existed without the gryph!

I'm not sure about aggro from mobs yet, I'm planning to test it soon but unfortunately the server my lvl 70 is on has been down for about 24 hours 
I don't believe you can be dismounted from a flying mount, however if something puts some big dots on you you can still die in midair (there've been some complaints about that in pvp!).
As far as height goes, it's as high as you want it to be, I've flown up to some really high floating rocks, so high that I can't see the ground below, and there was no indication that I couldn't go any higher.
