Looking at the localization.lua file I discovered that I don't have the correct translations for:
CENSUSPLUS_DARKIRON = "Dark Iron Dwarf"
and ??
CENSUSPLUS_ZANDALARI = "Zandalari Troll"

Doing census mainly on Draenor; Raluf - Nimsay - Lusmo - Quixx - Sosyan - Garthog - Trubin - Zalistra - Zesmi and Djaang
Taurena Altamontesa, with no accents - just checked my screenies of the races when I was finding them a while back.
As to the not-added races, best guess I can get is from changing language on the official website, so no females (and doesn't allow copy+paste, so I'll try to not add any typos... sigh):

Problem: it looks as though all of those are plural, and I think the game (and website for other races) uses singular. My language skills are not up to fixing that, although it might be mostly a case of switching the human/dwarf/orc/troll bit to match the regular race.
