It's really not hard. Once you have your baseline gear (non-crafted, since that's a #$%& to get) you have plenty of time/resources to put into farming for that mount. I'm still working on my spellstrike helm but after that I'm soo making a run for that epix riding
Highest I got to was about 3k. Then I got a lot of new gear that needed enchants/gems. Now I'm sitting at around 1800 and pretty much holding steady. Most of my playtime is during raids these days and raids are costly ;p
Heh know the feeling on raiding, I only do "casual" Karazhan raids... still go through a fair amount of gold on a bad weekend! Never had any money troubles though; my system is never buy something I could obtain myself, and it works well; selling the other drops I get while farming whatever I need means I'm always making money instead of losing it
Three characters with epic gryphs, enough gold for my fourth 70 to get one too (holding off atm but I'll probably do it soon) plus a complete collection of jewelcrafting recipes (40+ BoE blue ones, nearly all 200-400g or more) - I reckon I've done alright
I spent 10 days of constant farming for my epic flyer. I didn't bother running any instances or doing anything else. All I did was kill Talbuks in Nagrand like I was some farming bot rofl
Now I got 3 epic flyers... Swift Gryphon, Netherdrake, and Nether Ray. In addition to the 9 epic ground mounts that I keep in my bags
I didn't think getting the gold was all that tough but I really enjoy farming, so that helps out A LOT!
Daily quests really make it easy now. (Too easy imo) Just pick a few that you enjoy doing everyday and do it consistently. You will get there eventually.

Skinning... Back then Knothide Leather sold for 15g per stack
Plus it dropped some great trash loot, since grey items sell for over 2g at times. It worked out well. 4400 Talbuk's got wtfpwned in Nagrand when it was all over.

I absolutely hate farming, so I made the money by leveling alts. Between quest reward money and gathering professions (I made a killing with mining/enchanting while leveling my pally), I made the money without mindlessly killing the same guys over and over Of course, everyone has their preference... farming just bores me so badly that I'd rather do pretty much anything other than farm.
I actually have never done any of the repeatable quests since they were put in - I should try that sometime, I guess whenever I get around to getting my druid those last couple levels to 70 (at least I don't have to pay a bunch for the normal flight training this time around, haha.)

I use the same tooltip mod so I can see every drop I ever got, and the percentage, and total kills. I have been farming the clefthoof bulls, but after about an hour a day I get bored outta my mind. I try to set a goal of 2-3 stacks of thick clefthoof leather, and than I end up with several stacks of knothide leather, and knothide leather scraps, and primal airs from the stupid roaming cyclone things. In an hour or so I can make close to 200g with everything which beats any daily quest. The only daily quests I will probably do is the BG's ones that come out on 2.3

Yeah, I actually gave up leveling my LW at 365 on my hunter back in the day because I got so bored of farming those clefthoof bulls and talbuks south of garadar. It made me want to stab myself in the eyes

It is not hard as all the get the funds for these new epic mounts.
All it takes is self control not wasting gold on other items. When you have the epic mount then spend away. The next expansion is maybe one year away so you even have lots of time to safe up for the new epic mounts that are coming.
